The Love of Food...Manicotti-Style

There is no love sincerer than the love of food. ~George Bernard Shaw

My best friend and I not only like food, but we *love* it. We talk about it *a lot*...we call each other sometimes right before lunchtime to compare what our lunches will be. That is what I love about her. She shares in the delight of what the food does for the soul. It gives you memories you can hold onto forever.

Here is a recipe we once cooked together at her home. My family and hers loved that nice and very memorable afternoon. We found it on www.cooks.com :)

MANICOTTI STUFFED WITH SPINACH AND RICOTTA CHEESE

6-8 c. tomato sauce
1 pkg. manicotti
1 pkg. frozen spinach
1 pt. Ricotta or cottage cheese
1 c. Mozzarella cheese
1/4 c. Parmesan cheese
1 egg

Cook spinach, drain. Mix spinach with Ricotta cheese, egg, 1/3 cup Mozzarella cheese, 3 tablespoons Parmesan cheese all together. Stuff uncooked shells with the mixture.

Put two cups of tomato sauce in bottom of large baking pan size 9 x 12 x 2 inches. Arrange manicotti in pan 1 inch apart. Pour about 4 cups of sauce over manicotti to cover. Top with rest of Mozzarella and Parmesan cheese.

Cover pan with foil. Bake in 375 degree oven for 45 minutes. Uncover and cook 10 minutes longer or until cheese is lightly brown.

Let sit 5 minutes before serving. Serves 1-2 per person for 6-8 people.

****May you enjoy this in the company of good friends and family.****

Happy Day to You,
Nay
