It's the day before the official Christmas season! 
And so, the countdown begins...
Tonight, after the kids go to sleep, I think I'll be making advent envelopes. 
I used to fill them with candies and 99-cent-store finds,
but this year I'm thinking I'll put little cards in them.
Some days it'll say things like, "We love you <---this---> much"or something sweet like that.
Another day, maybe an easy activity (bake a cake, make cookies, draw a Christmas tree).
Or another day, a coupon for 25 kisses or hugs...

Future Apple

I wrote my bloggy bff an email yesterday that said something like,
"I'm becoming one of those bloggers...that's not really a 'blogger' - just features everyone else...nothing original...
Yup, one of those WOE IS ME kinda emails.  Wonderful Pidgy - she always knows what to say,
"Then change it.  Snap out of it.  Find your inner blog.  I'm excited for you.  I can't wait to hear what she has to say."
She always knows exactly what to say - kind of like slapping me around a little {with love, of course}. That warm and funny a lá PidgApeg-kind of way.  In other words:

Hey there!

And without further ado....
Hi Nay! Thank you soo much for letting me be a part of your family.

My name is MacKensie and I am a recent college graduate trying to figure out what to do with my life.
As a journalism major, I not only loved to write, but I also had a very difficult time trying to find a job after graduation. I started this blog as a way to express myself and continue to write during this in-between time. Basically, I needed a project - but what started out as a simple distraction has turned into a true passion.
I love blogging!

My blog jumps around a lot.
I like to do a lot of different things.
I cover topics like health and fitness (I recently ran a half marathon(wine-dine-overview)and am currently trying to recover from a very frustrating knee injury: (
hair, makeup and fashion (on a budget, of course)
my favorite books
and arts and crafts.
I have just recently fallen in love with cooking, so I’m often experimenting with vegan dishes and altering recipes to make them dairy-free (I am severely lactose intolerant, which is very difficult for a devoted cheese connoisseur like myself).

I have a very sweet boyfriend, a hilarious and eccentric family, super fun friends and the most amazing dog in the whole world (girl-her-dog).
On my blog you are likely to come across anything from sewing my very own bikini (fourth-of-july-crafting), to a discussion of my favorite type of deodorant, to a very-hungover-recap of my wild adventures the night before (movember-female-edition).
Then again, sometimes I will discuss tragedy(auntie-kaitlin), my quest to help others and how frustrating being unemployed/living-with-my-parents-at-age-22 can be.

I really hope you all will visit my blog. I can’t guarantee you’ll like it, but I can guarantee that you’ll get to know me a whole lot better.

*who am i*
Hello! I’m a 32-yr-old tattooed, crafty girl living with two adorable fur babies! Martha taught me everything I know about baking. I’m obsessed with fun tights and sparkly nail polish! I love red wine {or any wine really lol} I work in a corporate job and try to let my creativity shine through at every possible opportunity. My reports tend to be very colorful! My friends mean the world to mean and as their families grow we all change and adapt. I put a special effort into being the best “Aunty Brooke” that I can be.

*what’s my blog all about*
I originally started this blog in February with the idea of doing a photo a day for a year challenge. I thought starting one of my own would be a great way to add something new and fun in my life. I have struggled for the last year and a half with depression {I prefer to refer to this as “dark blue”}. Taking a photo a day would help me focus on the things I do have {as opposed to those I don’t}, the things that bring me joy and that I’m grateful for. Well, over time this little blog has morphed into so much more then that! I admit I have not taken a photo a day but what I’ve found in the process means so much more to me then being able to say I was “successful” with the challenge. I’ve found who I am, my voice, my style and a confidence I’d been lacking for a long time.

*what are my plans for the blog*
To continue discovering the things that makes me happy. Continuing to make new blog land friends. Hopefully one day meet some of you in real life. I’d also really love to get into doing blog design. I’ve just signed up for a college course that will work towards a diploma in Web Design! I’m pretty excited about this. If that can lead to being able to do design work for others how great would that be!

*yummiest food experience*
How do I pick just one?!?! The most recent EPIC food experience was a concoction I made this summer at the cottage. It’s tradition in our family to make s’ mores around the campfire. We often change things up by adding different ingredients. Well my fave this summer was made with graham cracker, peanut butter, perfectly golden toasted marshmallow, BROWINE, more peanut butter and lastly the top graham cracker…..sigh…. EPIC I’m telling you :)

That’s easy! My fur babies! Call me “Crazy Cat Lady”, I’m actually getting more comfortable with that title LOL I have had Milo for 4 years now and Matilda joined our little family about a month ago. She’s just a doll and has added the perfect dynamic to our little house. They bring a smile to my face when nothing else does. They cuddle with me when I’m sad or when I’m happy. They are always excited to see me when I come home and all they ask in return is a little love and some food :)

Dishin' It with Chef Marco {4}

Good Morning My Wonderful People!
I'm handing my bloggy over to Chef Marco today! {Don’t worry, I’ll be back tomorrow!!}
He has an awesomely yummy recipe again along with a little history lesson {and} a new take on the Thanksgiving meal (!)

Roasted tenderloin of beef
With saffron risotto and hollandaise sauce
Serves 2-3

• 2lb whole beef tenderloin
• 1cup raw Arborio rice
• ½ small onion diced small
• 8 cloves of garlic minced
• 2-3 oz white wine
• 2 ½ cups of chicken broth
• 1oz shredded parmesan cheese ( not powdered )
• 2 Tbls chopped cilantro
• ½ pinch of saffron*
• 3 egg yolks
• 6-8 Tbls of clarified butter
• ½ the juice of fresh lemon
• ½ cup plus 2 TBls of olive oil
• Salt and pepper
• 1pint water
• 1lb or 1 bunch large asparagus

For Tenderloin:
Marinate tenderloin with 4 of the 8 cloves of garlic ½ cups of olive oil, 1 tbls salt and 1 tsp pepper, preferably over night or at least a couple hours. Preheat oven at 375 degrees, in a smoking hot pan, sear tenderloin on all sides and transfer to a baking pan. Cook tenderloin for 20-25 minutes. For medium rare 125 degrees, medium 145 degrees, well 165 degrees. Meanwhile….

For Risotto:
Bring the chicken broth to almost a boil and leave broth on low heat. In a sauté pan on high heat, add 2 Tbls olive oil and sauté diced onions and remaining 4 cloves of garlic for about 1 ½ minutes. Add Arborio rice and saffron and toast for about 2 minutes. Deglaze pan with white wine and reduce about 1 minute. “This part of cooking risotto is very important”… add “hot” chicken broth little at a time, very frequently stirring risotto. If you turn your back on the risotto for to long you will burn it!! Also... The broth needs to be “hot” to keep the cooking process going. If you use cold or room temperature broth it will stop the cooking process and resulting with a terrible risotto. If you add all liquid at once you will most likely come up with soup! So it’s very important to add the broth little at a time and almost constantly stirring until rice is cooked. You want to make sure that all the liquid has evaporated once the rice is cooked and this is also why you add broth a little at a time. Turn flame off and Finish risotto with the parmesan cheese, chopped cilantro, salt and pepper to taste.

For Hollandaise Sauce:
In a small sauce pan add 1 pint of water on bring to boil then lower to a simmer. Put the 3 egg yolks in a small stainless steel bowl. Whisk the yolks and fresh lemon juice together. Place the stainless steel bowl over the pan with simmering water. Make sure you are holding the bowl with a towel because you will burn your self. Whisk the egg over steam for about 15 seconds then take off the steam pan continue whisking and adding about 3 TBLS of the clarified butter. Repeat process and cook eggs over steam for another 15 seconds, taking off steam pan and whisking in another 3TBLS of clarified butter. Repeat process once again. The finished product should be nice and fluffy. If it’s not fluffy you most likely need to cook the eggs longer and add more butter.

Chef’s Notes:
This is an easy dish to make. The most difficult part would be the HOLLINDAISE because if you leave over steam to long you will make scrambled eggs!! In cooking terms, to cook over steam is called a double boiler. It means to cook with steam not direct heat. You would melt chocolate the same way. If you were to cook over direct heat you will burn the product. VERY IMPORTANT: Make sure you rest any meats for at least 10 minutes before slicing it. This way all the juices stay in meat. If you cut the meat right away when it comes out of the oven, you will lose all the juice and resulting in a dry over cooked product! I like to rest mine for 15 minutes. This way I know for sure the juices have rested all the way through the meat. 

a little 411 on Saffron:  Saffron comes from the crocus sativus flower it is the small threads found in the pedals of the flower. It’s mostly grown in the Mediterranean and is distributed mostly from Spain and has many benefits!! Take some time and research it. Some benefits consist of…
• Weight loss/ reduced appetite
• Relieving symptoms of PMS
• Prevention of... breast, skin, and general cancers
• Prevents depression
• Protects the heart from diseases.
And much more, really look into it, its amazing where it comes from and the history. AWESOME!!

There is though a "not so good benefit" to saffron. It is the most expensive spice in the world. $50.00 per ounce, there is 28.35 grams in an ounce which would add up to $1.76 per gram. Yikes!!! You could find cheaper saffron but the product is not all that great. You can find saffron at Whole foods markets or Spanish and Indian specialty stores.

Thanksgiving Suggestion by Chef Marco…Instead of buying a ham, why not buy a prime rib roast or a nice side of salmon? Give this year’s Thanksgiving a twist! The kids will love a nice piece of medium rare prime rib!! Get the kids involved in cooking and eating home cooked meals with you… This will develop their palate, and hopefully prevent them from wanting junk foods… eating and living healthy!!!!

comfort zone in cooking. This will make us become better cooks by cooking new foods and using different

Tell us about you!
I'm Kristen! An Army wife new to Army life. My Soldier "D" is the most amazing man in the world! We don't have any babies yet but we do have a fur baby 'Monster' who is just as good :) I attended Paul Mitchell for hair and recently left my job as a visual merchandiser to move back home with family. I can't wait to meet all of you that inspire me and hopefully inspire some of you as well!
And what’s your bloggy about?
I started my blog to not only keep those creative juices flowing, but for my hubby to read when he gets home. Most of my posts are about staying motivated and growing throughout this new journey we are on. BEWARE: I am obsessed with prepared for lots of amazing ideas and mouth-watering recipes!!
Have you had an a-ha or eye-opening moment?
My biggest eye-opening experience is being away from the hubby for long periods of time! We haven't been away for more than a few days in 7 years! It has been 10 weeks so far since I have seen him and I have grown so much. I am so much more independent, motivated, and grow stronger everyday.

Wow…that’s awesome.  So, what keeps you sane & happy?
Working out! Did I just say that?!
Coming from a girl who HATES anything fitness related this is a shocker!
Today marks 30 days in a row of hitting the gym every morning and I feel amazing. There is nothing like waking up early, doing some cardio, and being ready to start my day!

Dear Body,
I know we're working together to make you a lean fighting machine (okay, at least not pleasantly plump anymore), but sometimes our mind and heart takes over.  I can't help it!  You really like sweets...and yesterday's brownie and bite of lemon tartlet really made us giddy.  So, forgive me!  I'll do better for you...starting tomorrow! {wink}

Dear Blog,
I am so thankful for you!  If you didn't exist, I wouldn't have the opportunity to write something everyday.  Before you, I pretended...I made believe that I would wake up early and write a page out {at least}, but never did it.  Now, you make me wanna do it.  I'm accountable to you and my awesome bloggy family.

I am amazed that bloggers are so out there in the real world.  Maybe I've just noticed it.  Who knows?  But when you see a photography blogger on a dishwasher liquid commercial, a fashion blogger on a clothing store commercial, and a lifestyle blogger featured on Oprah's O Magazine...pretty darn inspiring and cool, right?!

I'm pretty much in awe...the ones on the commercials may not be real bloggers, but come on! Oprah!?
