{#15} "Check Her Bloggy Out!!" {Earl-Leigh}

Happy "After Christmas Day" Everyone!
I hope everyone's Christmas was merry and bright:)

It's time for
and I am very happy to have
Miss Earl
You all know how wonderful she is and I'm very, so very happy, to have her become a part of my blogger-ette family!
So without further ado...

Hey y'all! I'm so pleased to be meeting everyone! My name is Earl and I blog over at Earl-Leigh Designs.
That's me with my hunk of a man. ;)
I'm a twenty something, married Southern gal and pupster mom.

I love to spend time with my little family and do the cute things that Mike finds ridiculous. Christmas ornament painting session? Yes please!
When I'm not hanging with the mister or the pupster, I'm either sewing or attempting to sketch out ideas. I make accessories for babies and ladies that range from bibs and blankets to clutch bags and headbands. My shop will be open in January...which is exciting because I'm months behind schedule. As they say, "life happens" but I'm not going to let that stop me. If you have a dream/goal/idea go after it. I spent so many years saying "I wish i could do this, I wish I could do that" and would see other people at least make the attempt to make their dreams come through. My uncle (the Earl to my Leigh) would tell me that I could do it...that I needed to at least try. I pussyfooted about with my lip poked out. I had so many excuses. I cant right now because: I'm still in school, i just graduated so I need to concentrate on finding a job, I'm planning the wedding. All the while, my uncle was still telling me to set goals and knock 'em out. (that's my verbiage, not his. ha!) Even after he was diagnosed with cancer, he would tell me to have FAITH and to believe in myself and HIM. He passed away the day before his 50th birthday. Life on Earth is so short y'all. I stopped saying "I wish" and started saying "I'm going to". I kick myself regularly because I waited so long, but I'm doing it now. Is there something that you want to do? Make a plan of action and attack it!

{Calendar Me Fabulous}

What I Love Wednesday!
I love organization. I know I've told you all this before :) But I do!  I think it just calms me...
These calendars would just make me way too happy to have!

a sigh of relief...

You know how some days you wonder, "what if....?"

Well I used to do that a lot until one day
I woke up


I remembered.
I remembered what it was like to be out in the world alone.
I remembered how much I hated the dating scene, the game of the chase, and thinking I would never have anything or anyone of my own.

I remembered how my 20s were full of doubt.
Would I live with my parents forever, never venturing out on my own under the safety net they provided?
Would I never know what real love was, always chasing what never wanted me?
Was life always going to be a struggle of unrequited love?
Was I ever going to have children?
I prayed everyday that God would lead my future husband to my life path.
That He would give me a man that was ready for me and would protect me and shower me with the love I knew I deserved.  But in all those prayers I was still very doubtful. I feared that God hadn't dealt those cards out to me. I thought His plan for me was very different.
Had I only just trusted then I would have known that the cards had already been dealt long long before.

He had put me through trials and tribulations because He was readying me for what I have now.
He wanted me to be strong enough for what lay ahead.
And what came my way was molded in His hands
with so much thought and love, 
I could never have dreamt it on my own.
 He just wanted to be sure I was ready.
When I finally was, He gave me all the wishes of my heart.

The man I prayed for was ready too and had always been in my life.
I didn't know that I'd marry my best friend! God gave me someone who knew me inside and out. He prepared us for each other by making us friends first and then molding us to each other.
It wasn't easy (I played way too hard to get), but God was patient.

Now I am married with two kids and it is just as it should be.
No if, ands, or buts about it.
Once I trusted the One that knows what was best for me, the true me, all was right in my world.

I no longer need to worry if I'll be alone- He brought me my life partner- or if there was an answer to all those,"will it ever happen?"
He just drew the right masterpiece for my life on His canvas!
And for that I am no longer fearful.
I put my life in His open arms and never look back.

That's what I feel we should all remember...
He knows what He's doing even when we don't.
So there's really no need to wonder "what if?" anymore, just "what's next?" :)

It’s all yours, love!
 I'm a twenty-something mother, girlfriend, daughter, nursing student, and motivated woman. My favorite color is yellow, the color of happiness and I have a thing for curling up in my sweats with a blanket, hot cocoa and a good book.

I started my blog this past May and honestly I have no idea where I'm going with it, but that's what makes it fun! I'm not usually a very spontaneous person-- I like schedules and lists and dislike change-- but my little blog is somewhere I can 100% be myself and just fly by the seat of my pants. And I love it.

My most memorable A-ha! moment would have to be when I realized what I wanted to be when I grew up. I was in high school, working in the nutrition department of a nursing home and truly looked forward to each and everyday I could go to work and serve the elderly and socialize with them. It was then that I realized nursing was the job for me.

As cliché as I'm about to sound, the one thing that keeps me sane in my life is my daughter, Alea. It's true though. She can tell when things aren't quite right with mommy and somehow knows that some extra snuggles or giggles will help turn my entire day around. And she's right. While we're on the topic though, coffee keeps me pretty sane as well!

I had Brooke over here for a "Check Her Bloggy Out!!" and we became fast friends...which is the best part, apart from the NEW BLOGGY DESIGN (I'm thrilled, ok?)...and I had commented that I would be her guinea pig anyday for a blog design.  And she ACTUALLY took it seriously!

We played around with some ideas...I gave over my life {okay, just a password or two} and voila!  I get this : )

I am WAY too happy for words...

I'm A Cow(L) Girl...yes I am

Oh, I *so* want to know how to crotchet better...I crotchet pretty well but only know maybe 2 or 3 stitches.  And, I love to look up free patterns, but I don't know how to read them because I learned to crotchet by *watching*. You know me, though.  If there's a will, there's a way : )

Dishin' It with Chef Marco {5}

Chicken Cordon Bleu
rustic fingerling potatoes and beet tangarine salad {white wine dijon cream sauce}
Serves 4


4 6-7 oz chicken breast
4 slices of Swiss cheese
4 slices of ham (preferably black forest)
6 garlic cloves minced
¼ cup chopped parsley
3 medium red beets peeled and cut into medium size pieces
½ seeded cucumber seeded and cut into crescents
½ medium brown onion slice thin
2 large tangerines peeled and cut out segments
2 lb fingerling potatoes cut in half lengthwise
½ cup white wine
16 oz heavy cream
5 whole eggs
1 ½ cups of all purpose flour
2 cups Home made or store bought seasoned bread crumbs
3Tbls Dijon mustard
3Tbls of unsalted butter
Tbls of paprika

Pre heat oven 375 degrees. Marinate chicken with garlic, chopped parsley, salt and pepper. Pound out chicken between a freezer bag with a mallet about ¼ inch thick. Lay out 1 slice of Swiss cheese on top of pounded chicken; lay on top of Swiss a slice of ham. You could add more Swiss or ham if you want but it might be difficult to roll the chicken into roulades. Roll up chicken to seal. Using a baking sheet lay out flour and season with salt and pepper. Gently roll chicken in flour and coat on all sides. In a large bowl add eggs and beat them with a ¼ cup of heavy cream. Toll gently the floured chicken in egg wash and coat well. Using a baking sheet lay out seasoned bread crumbs and coat well. Transfer chicken to a non stick baking sheet pan and put in oven for about 30 – 40 minutes until golden brown and chicken is cooked (160 degrees). Meanwhile in a hot sauce pan and wine and reduce by half, add rest of heavy cream and reduce by half or until cream develops large bubbles as its cooking, add in 3 Tbls of Dijon mustard to finish off sauce. Cook off beets in boiling salted water for about 15 minutes. Strain and cool off. Boil potatoes for about 10 minutes until almost cooked. (You can cook off beets and potatoes ahead of time before doing the chicken). In a hot sauté pan add butter and potatoes and sauté until crispy about 10 minutes; finish off potatoes with salt, pepper and paprika. Mix beets, tangerines, sliced onions, cucumber crescents in a bowl and season with salt and pepper. Once chicken is finished let rest for at least 10 minutes and slice, about four cuts with knife. Lay out chicken so you can present what’s inside of it. Place salad and potatoes on either side of dish and sauce to your liking. All around dish or on top of chicken, how ever you want. Don’t forget to garnish your dish.

When you have it all, you never imagine it can be lost so fast. You take for granted that money is always in your wallet, that food is always well stocked in the kitchen. You never think that having two cars is a big deal or having a mortgage is either. You're like everyone else, right?

A new Coach purse, weekend trips, shopping, eating out....everybody does that.

Or do they?

It's a rude awakening and a blessing in disguise when
it's gone.
Yes, just like that.

One day, the job is gone because there aren't anymore house sales...which means no more of a lot of other things.
Eating out? Not anymore.
That Coach purse you wanted? Food is way more important.
You realize that losing the house, the other car...moving 4 times in one year...moving in with your in-law's.... You can do it.

You do anything to keep a roof over your kids' heads. Anything. You learn that Ramen is really not that bad as long as the kids can eat something better. You learn that Starbucks is a luxury.

You feel like you're rock bottom.

Those forever friends really aren't...Extended family? you suddenly can't get a hold of job means no money which, in turn, means you learn what's really important.  And, sadly, who is really in your corner.  You slowly, very slowly begin to learn that you can't take anything for granted. And the only thing that really matters is the four of you. If you can get through that, all of you can do anything.

Your children, your stronger-than-you-ever-prayed-for marriage...that's all that really matters. It's the four of you battling and finally winning to the best victory of all.

So looking back -
at 30-years-old I had it all or so I thought.
Now I'm 37
and I have less than half of what I had in money - but the difference is everything is priceless now.

And that is what I know for sure.

I may have asked at one point how could this happen to us?
It took "this" to learn that He never puts you through anything you can't handle.
This was always in The Plan so we could be who we are today.
And for that...
for that I am truly grateful and full.
Full of praise and knowledge that we are always tightly held in His grip.

my computer screen clock...wishing the time would go faster so I could see my hubby and kids at home. 
nothing! i had a cheeseburger and salad...I feel so guilty...:/

Hi, My name is Kathy.
I'm a total nerd and proud of it. I love math. I've always wanted to work with animals. I like reading, video games, and tv. I am married to a wonderful man, and we have the greatest dog in the whole world. I work as a construction inspector for the State Highway. I am an EdZoocator for the Maryland Zoo at Baltimore, and will gladly talk your head off about penguins if you give me the chance. I am the Chapter Organizer for the HPA chapter: Potterwatch of Maryland. And will also talk your head off about Harry Potter. I love travelling, photography, scrapbooking, t-shirts, chocolate milk, and rainy days.

What's your bloggy about - why did you start - what are your plans for it?
My blog is about what ever I feel like talking about from day to day. Expect to find posts about my novel, penguins, zoos, my family, books, and other nerdy things.
I started my blog as a way to update my family with everything that was going on in my life, but it's become so much more than that. Some of the people that I now consider my best friends are people that I met through blog.
My plans are to keep doing why I've been doing. I'm always hoping to meet new bloggers and make new friends. The next year will include a new GoodReads challenge, a new NaNoWriMo novel, and more updates from my 101 in 1001 challenge. And hopefully a published novel and my first wizard rock song.

Tell me about the yummiest food experience, or an eye-opening life experience ...
My favorite place to east is the Melting Pot which is a fondue restaurant. Every time I go there it's the best meal I've ever had.
The biggest eye-opening experience in my life was when I went into the mental hospital this past year for an anxiety disorder. They tell you that when these things happen, you learn who your real friends are, and boy were they right. It made me realize what people I needed to take out of my life and who I needed to let back in.

 What one thing in life keeps you sane and happy?
My family, aka my husband and my dog. They are the greatest family I could ask for, and they definitely both keep me sane and happy in their own ways.

2 Weeks Worth of Letters...

Where are you?  Why do you leave me in the most inopportune times?  It's really not that nice in this blogolicious world when you aren't around.  I miss you.  Please come back...I promise to listen!

Dear iPhone and Thumbs,
I know you guys don't have the best relationship in the world, but could you PLEASE try to work together?  Thumbs, I know it's hard for you since you aren't on the tiniest of hands, but come on ( ! ) work with iPhone and me a little.  I know you can do it!  I have faith in your ability to get the correct words down so that iPhone won't make fun of you with those weird words that come out of it.

Dear Follower,
Yes, I'm writing you a little note this time.  I am thrilled to have you.  Do you know that?  I know I don't do giveaways all that much, but you still come back to read my inner blog.  And you know what?  It means the WORLD to me.  You are awesome!  Thanks for sticking around even when *Inspiration* has taken a little vacation on me (see letter above).

Dear Google Friend Connect,
I'm kind of having a bit of a hard time with knowing if I should keep you or not.  In 2012, you aren't going to represent my true numbers.  I kind of feel like I should get rid of you like other bloggers have, but then I think, "No biggie.  GFC will only show my Blogger Followers.  The other followers can just subscribe by email, right? Or follow me on Facebook or Twitter? {hint hint} I'll work this out.  I know you aren't the cause of the end of the world or anything.
ps:  I don't want to do Google+!  And you can't make me.  Do you think I wanna go crazy with one more thing!?! Jeesh!

Dear Aunt Flo,
So in October you visited two times.  Two times!  Do you really think I needed to see you that much???  Then in November, you stayed around for just a few days.  Does this mean you are just going to visit when you please and as often as you feel like?  Well, I don't think so!  I'm putting my foot down!  Yeah, you heard me.  Don't even think of visiting during that week between Christmas and New Year's, do you hear me?!  I won't have it!  Please?

Dear Body,
Thank you for not gaining any more weight these last two weeks : )  I really appreciate it.  I know I've been giving you a few of those Toasted Marshmallow Lattes in the past couple of weeks, but I know how much you like them...and, really, it's only until Christmas break.  Remember, we'll be out of the office between that week and New Year's, really, you only get to have a few more from the campus coffee shop.  And another thing, we haven't lost much more weight either {just sayin'}.

Dear Christmastime,
I'm so happy you're here.  The living room is filled with your beauty.  I even have you decorated all over my cubicle!  Did you like the garland and little twinkly lights I put up on the wall.  Great idea, huh?  It makes it so much more inviting when the faculty and scholars come to visit us in our little space : )

Dear Blogs I {Heart},
You make my mornings pretty darn wonderful...
It's a pleasure to have you buttons on my bloggy.

I saw this yesterday on pinterest and said to myself,
"Hey Nay, are you reading this?  This is what you're supposed to be doing!"
I'm guilty.
I admit it.
My confession?
I'm a
Just try to get a word in while we're having a conversation.  Just try.  I dare ya!
And, really, I feel bad for the person on the other end of the conversation...
How crappy must it be to be sitting there, having a cup of coffee with me, and I can't stop talking?! 
It's like one of those conversations where one person keeps talking about herself, and then the poor other friend finally gets a chance and says,
"So enough about you : ) Can I tell you something now?"
My best friend goes through this all the time...she is so sweet, too.  She'll stay silent the whole time I'm gabbing it up and will *try* to say that
{pretty much, she's probably hoping I'll have to breath between sentences}. 
And then, I feel dirt...because I'm making it all about me.  That's what makes me a bad friend.  But I know she knows how I am and is oh-so-tolerant...and secretly, she knows it's pretty amusing {I definitely know she finds it hilarious when I'm ranting about somethin'}.
So what do I do to remedy this, you ask?
I try...really give myself a vow of silence when calling her....and just say,
"So how are YOU doing?"
And then just let her talk...

and this is a BIG but,
if she's says,
"Oh , fine, and you?"

She asked for it, right?
